Canh chua-Vietnamese sour fish soup.
- One roma tomatoe
- 1 – cup fresh pineapples ( substitute with canned pineapples )
- 1 – cup ngo om ( substitute w/ basil ).
- 1 – cup tamarind paste
Few stalk bac ha, peel and slice thick pieces then pour 1 tsp salt in and squeeze the bac ha .
put in water removes all the salt.
Prepare the mullet fish by cleaning and cutting it into 4 pieces. Then, fry until light brown ( but, don’t overcook )
Put about 10 cup water in a pot let it boiling then add the fried fish and the pineapples in same time cook until well done.
-scoop 1 cup soup in the bowl of tamarind paste let it dissolve and strain it to remove the fiber then pour in the soup (little by little until the sour you want).
Add the bac ha and tomatoes in let cook about 2 minutes. Then add fish sauce and dash of salt (taste), and finally top of ngo om when the soup is almost done.
