Opo Squash Soup w/ Shrimp & Pork Balls

Opo squash soup w/ ground pork & shrimp meatballs.

Ingredient:

-2 lbs opo squash.

-1 cup shrimp.

-1/2 cup ground pork.

On a cutting board, chop shrimp until minced.

In a bowl, add the minced shrimp and ground pork. Then, add 1 tsp. cornstarch, dash of salt, and pepper. Mix well together, and set aside.

Boil 6 cups water, then scoop spoon size meatballs into the boiling water at medium heat. Cook until well done. Your meatballs should start to float once they are near fully cooked.

Cut Opo squash into pieces. About 2 lbs.

Put the Opo squash in boiling soup. Cook until the Opo squash become translucent. When the soup is ready, add some fish sauce, salt (taste), and green onion.

Your Opo soup is ready to serve.
