Hainanese chicken rice ( Chicken broth rice ).
Rinse and drain the chicken .
Add the chicken into boiling water, bring it to boil and cook at low heat for 10 minutes ( 31/2 lbs chicken ).
Skim off foam .
Cover the lid and turn off the heat , let it simmer in hot broth for 20 minutes .
The chicken is done in 170 degree F.
Set the chicken aside and keep the chicken broth for the rice.
The boiling chicken is ready to serve.
Wash and drain 4 cups rice and 3/4 cup chop garlic (depend how much garlic you want).
Add the the garlic with 2 tsp oil into the pan over low heat and stir the garlic until light brown and fragrant.
Pour the rice in garlic oil and keep stirring over low heat until the rice is fully coated with oil garlic fragrant.
Pour the rice and chicken broth into the rice cooker and add some salt in and cook until the rice is tender.
Cook the rice with rice cook.
Hainanese chicken rice is ready to serve.
