Broken rice congee. Soak and drain the chicken breast in hot water (the chicken broth is more clear ). Add the chicken breast into the pot and fill with 8 cups water, bring to boil and lower the heat. Rinse and drain 1 cup broken rice. Add the broken rice into the pan, and keep tossing over low heat until the broken rice turns light brown. Pour the rice into the chicken breast broth bring to boil and lower the heat and cook for 20 minutes, stir constantly. The chicken breast is done in 170 degree F. Tear the chicken breast into pieces,and add some fish sauce into the congee . Shred the chicken , green onion and pepper on top. Now the broken rice congee is ready to sever.
